Stuffed calamari


  • 15 pc (4 to 5-inch long) cleaned squid with tentacles rinsed and clean
  • Tomato & feta mix – Mix in large bowl
  • 2 lb feta cheese medium diced
  • 2 lb tomatoes medium diced
  • 1 cup toasted pine nuts
  • Fresh herb pesto pureed in a blender
  • 1 cup basil
  • 1 cup oregano
  • 1 cup parsley
  • 2 cup olive oil
  • 1 tea. Black pepper


Combine both mixture and gently mix making sure not to crumble the diced feta. Stuff each calamari with tomato mixture close calamari with head and Secure with a tooth pick while stuffing make sure not to over stuff. Over stuffing will cause the calamari to tire open while grilling. Grill for about 4-6 minutes evenly.
